HAPPY WEEKEND!!! I’ve been waiting all week for this steak! Yes, I could have made it during the week, but I’m seriously sensitive to caffeine. Even the slightest bit of coffee will keep me awake all night so I thought it would be a good idea to wait till the weekend. Yeah, I know I’m probably being dramatic…but I’m not kidding about even the slightest bit of coffee affecting my sleep!
You may be thinking, “Really? Coffee on steak??” YES!! Oh man…you have to try this! It gives the steak such a rich, bold flavor. The coffee rub is a mixture of ground coffee, cocoa powder, ground mustard, brown sugar, and a few other spices.
To help the dry rub stick to the meat, I smear room-temperature butter on both sides of the steak, then pour the dry-rub all over the steak. By the way, you will need a cast iron skillet for this dish. You’ll be using your oven and your stove-top burner.
Here’s a breakdown of the process step-by-step. You’re going to need to move fairly quickly so it’s best to be prepared! You’ll also want to have your kitchen timer handy.
– Bring the steaks and 2 Tbsp of butter to room temperature. Take them out of the fridge about an hour before you’re ready to cook.
– Put the cast iron skillet in the oven, and turn the oven on to preheat (500 degrees F). Make sure your kitchen is well ventilated…it’s about to get very smokey!
– Smear the butter all over the steaks (I don’t worry about the sides…just top and bottom), then sprinkle a very generous amount of the coffee dry-rub on both sides.
– As soon as your oven is at the right temperature, turn on the burner on your stove. Take your cast iron skillet out of your oven with oven-safe gloves and put it on the hot burner.
– Place the steaks on the hot skillet. 30 seconds on each side.

Coffee Crusted Ribeye Steak
Ingredients
- 2 rib-eye steaks about 1 inch thick
- 2 tablespoons room temperature butter
- 3 tablespoons ground coffee beans
- 1 tablespoon cocoa powder
- 2 tablespoons brown sugar
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon ground mustard
Instructions
- Take your steaks out of the fridge about 1 hour before you’re ready to cook to bring them up to room temperature.
- Put your cast iron skillet in the oven, then preheat to 500 degrees F. Make sure your kitchen is well ventilated. It’s going to get very very smokey!
- In a small bowl, mix ground coffee, cocoa powder, brown sugar, garlic powder, salt, pepper, paprika and ground mustard.
- Smear butter all over the steaks.
- Pour a generous amount of the coffee dry rub on each side of the steak.
- Turn on your stove’s burner. Using oven safe gloves, take your skillet out of the oven and place it on the burner.
- Place the steaks on the skillet. 30 seconds on each side.
- Using oven safe gloves, place skillet back in the oven and let the steaks cook 2 minutes per side (medium rare…for well done, add 1 minute to each side).
- Remove steaks from skillet and put them on a plate.
- Let sit for at least 5 minutes (under tin foil) before cutting into steak.
