This is my current go-to dish when I want a quick, easy and tasty meal. I CRAVE this dish every once in a while. The sauce has so much depth of flavor. The chicken is moist and tender. The best part about it is that it just takes minutes to prepare. No need to marinade. I recommend using chicken thighs for this dish, but chicken breast will also work.

Chicken with Cashew Nuts
Ingredients
- 2 Tbsp peanut oil or any cooking oil
- 1 Tbsp garlic minced
- 2 cups chicken thigh or chicken breast cut into bite-sized chunks
- 1/2 an onion sliced into thin strips
- 1/2 cup roasted cashew nuts whole
- 1 Tbsp fish sauce
- 1 Tbsp soy sauce
- 1 Tbsp oyster sauce
- 1 1/2 Tbsp palm sugar or brown sugar
Instructions
- Heat oil in wok over medium heat.
- Add garlic and onion, fry till fragrant (about 30 seconds)
- Add chicken.
- Stir-fry until chicken is almost fully cooked.
- Add fish sauce, soy sauce and oyster sauce, and sugar.
- Increase heat. Mix well until chicken is fully cooked.
- Stir in cashew nuts.
- Garnish with chopped green onions.
- Serve with rice.
