Parmesan Crusted Chicken is a frequent dish at our dinner table, especially on those super busy weeknights. It takes literally just minutes to prepare and only 20 minutes to bake. The hardest part is waiting 10 minutes for the chicken to rest after you take it out of the oven (Confession: I don't usually wait that long to dig in).
The mayonnaise topping is not only flavorful, creamy and delicious; it keeps the chicken extremely tender and juicy. Your family and your guests are sure to love this dish. It pairs very well with most side dishes. My favorite side dish to pair Parmesan Crusted Chicken with is Bacon Wrapped Asparagus.
Just before you are ready to prepare the ingredients, preheat your oven to 450 degrees F. Allow 4 chicken breast halves to sit at room temperature for about 20 minutes before cooking. This will allow the chicken to cook evenly.
Combine ½ cup of light mayonnaise, ¼ cup grated Parmesan cheese, ¼ cup panko breadcrumbs (note: set aside another ¼ cup of panko breadcrumbs for later) and ½ a teaspoon of garlic powder in a mixing bowl. Stir well to combine the ingredients.
Place 4 chicken breast halves on a baking sheet lined with parchment paper. Season the chicken breast halves with salt, pepper and a dash of garlic powder.
Divide the mayonnaise mixture between the 4 chicken breast halves. Use a spoon to spread the mixture evenly over the top of each piece of chicken breast. Do not use your fingers for this task - the mixture will tend to stick to your fingers instead of the chicken!

Bake for 20 minutes.

- Take the chicken breast out of your fridge and allow them to sit on your kitchen counter for about 20 minutes to bring them to room temperature before cooking. This will allow them to cook evenly.
