It’s grillin’ season! Got some leftover BBQ chicken? These Skillet BBQ Chicken Nachos are perfect for a “dinner and a movie” night in! These are a snap to prepare and perfect for sharing.
No leftover chicken? No problem! You can either buy pre-cooked chicken and shred it, or prepare it yourself in just a few minutes. All you need is just 1 chicken breast or 2 pieces of boneless, skinless chicken thighs. Chicken breast is easier to shred than chicken thighs, but personally, I prefer dark meat. Just use whatever you have handy. You can poach, grill or pan-fry the chicken. It only took me a few minutes to grill my chicken. I just covered it in BBQ sauce and slapped it on the grill.
Place one layer of tortilla chips in a skillet, cover with shredded cheese (don’t be stingy with the cheese!), top with shredded chicken, then cover with BBQ sauce. Repeat with one more layer. Put it in the oven to melt the cheese (and it also caramelizes the BBQ sauce just a little….yummmmm!!!)

After you take it out of the oven, top with the rest of the ingredients (red onion, avocado, jalapeno, olives, cilantro), and you’re done! The skillet will be very hot, so please place it on a trivet when serving.

Skillet BBQ Chicken Nachos
Ingredients
- 1 bag Tortilla chips
- 1 cup shredded cheese Mexican cheese blend
- 1 cup shredded chicken
- 1/4 cup Sweet Baby Ray’s original BBQ sauce
- 1 small red onion thinly sliced
- 1 avocado diced
- 1/4 cup sliced olives
- 1 jalapeno sliced
- 2 Tbsp cilantro
Instructions
- Preheat the oven to 450 degrees F.
- Layer the tortilla chips in a cast iron skillet.
- Sprinkle the cheese on top of the tortilla chips, top with shredded chicken, then BBQ sauce.
- Repeat with one more layer.
- Bake in the oven for about 5 minutes or until all the cheese is melted.
- Top with sliced red onion, avocado, olives, jalapeno and cilantro.
- Enjoy!

Hey Dave! Nope, I didn't marinade the chicken for this dish. I just put the chicken in a ziploc bag, added a couple of tablespoons of BBQ sauce, and "massaged" it into the chicken right before grilling. You can certainly marinade it if you want, though. I can't wait for you to try this out! Cheers!
